提示:
⊙ 如果煮熟后南瓜不够面,可以用叉/勺压扁少许,使得汤中有南瓜碎碎,味道会比较香浓。
⊙ 面糊的厚度要掌握好,不能太稀象水样的,那样面疙瘩会太小;也不能太厚了,不容易熟也不容易吸收南瓜的味道。要用勺背可以托起大块面糊,面糊又会流动,以大块形状掉入锅内。
⊙ 面疙瘩入沸汤的时候,要不时搅拌一下汤,以防粘底,或者疙瘩和疙瘩之间粘连。
⊙ 除了南瓜以外,还可以用红薯、香芋等块茎类植物来煮这款糖水。
Tips
⊙ If the squash is tender,but the soup is crystal clear. Then use a fork to mash a few pieces. This makes the soup taste better!
⊙ Batter can not be too thin, or it won’t form dumpling. However if the batter is too thick, it takes longer to cook and won’t absorb the squash flavour as much. It should be thick enough to be able to use spone back to lift big chunks of batter, and yet liquidy enough for the batter to drop into the pot in big chunks too.
⊙ When you drop the batter into the soup, mix the soup once a while so that the batter won’t stick to the bottom or to each other.
⊙You can also use sweet potato or taro roots to cook this dessert soup.
