This one calls for bamboo shoots, and chinese pickled vegitable (Xue Cai)
Cooking instruction:
Cut the bamboo shoots into small strips (or even dices if you wish), boil for a few seconds and drain.
In a hot pan, add oil and then diced green onion (white part only). Stir
fry the bamboo shoots and the pickled vegitable for a bit. Add a few tbsp of water, reduce heat to medium and boil till there’s almost no juice left. Serve hot or cold!
Depend on the saltiness of the pickled vegitable, you may add some salt to taste.
Not quite done yet! You could stir fry some thin strips of pork to add to the dish. Then it becomes the perfect topping for noodle soup!
